Cho Young-sook, Director of the Gyeongsangbuk-do Agricultural Research and Extension Services, stated, "The fermentation starter identified from traditional regional pastes will serve as a vital key to transforming local produce like soybeans into healthy and delicious high-value food products," adding, "We will bolster research in the food sector so regional agricultural products gain wider industrial use and help Korea's fermented pastes reach global dining tables."
The Gyeongsangbuk-do Agricultural Research and Extension Services announced the development of a user-friendly powdered fermentation starter utilizing indigenous microorganisms isolated from traditional local fermented soybean pastes. The newly developed starters have been distributed to 15 specialized processing facilities across the province to verify their quality improvement effects on meju, doenjang, and cheonggukjang.
The powdered starter simplifies application for small-scale producers by allowing direct addition to boiled soybeans. Utilizing this starter shortens processing times compared to natural fermentation, ensures uniform product quality, and significantly reduces the risk of harmful bacterial contamination. The agency has completed patent registrations and applications for functionally superior strains, including GBA 59 for antioxidant bioavailability, GBA 161 for immune regulation, GBA 89 for calcium absorption, and GBA 107 for thrombolytic activity.
The province plans to link these research achievements with 'GUSU', the joint provincial brand for traditional soybean products, positioning them as accessible K-sauces for global markets. This initiative aligns with provincial policy goals to elevate food industries into strategic future engines and reinforce national biological sovereignty.
